Care and Preparation

Product Arrival

  • On Arrival count the boxes and compare to the invoice.
  • Look for any damage to the boxes that may have occurred in transport.
  • Record the temperature of the inside of a pie with a probe. Core temperature should be less than 9oc.
  • Damages or temperature variances should be recorded on the delivery manifest before the driver leaves. Product with a core temperature over 9oc should be rejected.

 

Product Storage

  • All Pies should be stored in a chiller at 4oc or freezer at -18oc until you are ready to heat them for sale.
  • The box should remain closed to stop the pastry from drying out.
  • Utilise the food safety smart method of FIFO - FIRST IN FIRST OUT to ensure that you maintain good stock rotation don't end up with expired stock.
  • Ensure you use product before the sell by date to minimise any wastage.
  • Thawed product has a 13 day shelf life in a chiller from defrosting.

 

Product Heating

This product can be heated in the bag.
NB: Microwave heating can result in soggy pastry

Thaw / Defrost:

  • Recommended: Thaw in chiller for 6-10 hours or overnight.
  • Quick Defrost: Thaw in microwave on 350w for 2 - 2.5 minutes.

Pre Heat oven to 180C.
Microwave may soften the pastry.
Heat for 15 minutes or until core temperature has reached 75C.
Place unside down in centre of microwave.

Product Display

There is nothing better than a fresh hot pie that your consumer can bite into as soon as they leave your store. Not all purchases are for immediate consumption though.

Hot Pies

  • Always make sure that your warmer is clean and functioning correctly.
  • The ideal temperature to display a Dad's pie at is between 60oc and 65oc as this minimises any bacterial growth inside the pie and extends the warm shelf life of the pie.
  • Dad's pies should not be kept in a warmer for longer than 4 hours so that consumers can get the best possible Dad's pie and want to come back to buy again. So plan your bakes to make sure you always have fresh hot product available, especially at busy times.
  • Don't stack pies on top of each other, this cracks the pastry and detracts the consumer from purchasing a fresh hot pie.
  • Don't keep pies from the previous day and reheat them again, a consumer will buy a now substandard pie and won't come back.
  • Use flavour identification labels which Dads can supply to you.
  • Use Dad's point of sale material both in the store and outside to tell people you have fresh hot Dad's pies just waiting for them inside.

 

Chilled Pies

  • Dad's chilled pies have a shelf life of 13 days from production if chilled and 13 days from thawing if bought in frozen.
  • Use the supplied merchandising units to pack Dad's pies onto the shelf as this identifies that you have great pies in stock and keeps them neat and attractive to entice consumers to buy.
  • Remember to use the FIFO method (First in First Out) so that you rotate your stock to stop your store from getting expired pies.
  • Use flavour identification labels which Dads can supply to you.
  • Use Dad's point of sale material both in the store and outside to tell people you have fresh Dad's pies just waiting for them inside.
  • Have a clean microwave nearby so consumers can heat their pie if they want - the best is to do it at the check-out so you can heat the Dad's pie optimally.
